Classic Summer Salad with Tomatoes and Cucumbers
The classic summer salad can be enjoyed all summer long, as soon as the tomatoes and cucumbers ripen in your garden.

- 1 big cucumber, chopped
- 5 medium tomatoes, chopped
- ½ red onion, chopped
- olive oil, to taste
- salt, to taste
- black pepper, optional
- 1 handful fresh dill, optional
Cut tomatoes into small pieces and place into a bowl.

Chop red onion and add to the tomatoes.

Cut cucumber into small slices and place into the bowl with tomatoes and onion.
1 big cucumber,
I like to also add a handful of chopped fresh dill and add to the bowl with the rest of the cut vegetables. (this step is optional, and you could add cilantro or parsley instead.)

When you are ready to eat the salad, combine it with 3-4 Tablespoons of olive oil.
