Creamy Cucumber and Radish Salad
The perfect cold salad on a warm sunny day. Creamy radish and cucumber salad is made with fresh ingredients in just a couple of minutes.

- 1 bunch radishes, sliced & cut into quarters
- 1 English cucumber, sliced & cut into quarters
- 1 stem fresh dill, chopped
- 2 Tbsp mayonnaise, I like to use avocado mayonnaise
- 1 scallion, chopped
- salt, to taste
Place eggs in a large pot and boil them for 5-7 minutes on medium-high heat.
1 bunch radishes,, 1 English cucumber,, 1 stem fresh dill,, 1 scallion,, 2 Tbsp mayonnaise,
Remove the eggs from heat, place in cold water, and set aside. Once cool, remove egg shells and chop them.

While eggs are boiling, slice radishes and cucumbers then cut them into quarters. Chop fresh dill and green onions.
Place radish slices, cucumber slices, onions, dill, and hard-boiled eggs in a large bowl and coat with avocado mayonnaise.
Add salt and black pepper to your taste. You can chill in the fridge for an hour, do a final toss, serve, and enjoy!
