Easy Cheesy Bruschetta Chicken Bake with Tomatoes
Easy finger sandwiches work well as an appetizer or a lunch.

baguette,
thinly sliced

or a few small ones, chopped

chicken thighs,
boneless & skinless, cooked & shredded

Instructions
Boil the chicken with a pinch of salt for 20 minutes.

Chop tomatoes and a handful of fresh parsley.
3-4 medium tomatoes,,
1 handful parsley,
Shred mozzarella cheese, if you haven’t yet.
1 cup mozzarella cheese,
Chop the boiled chicken into small pieces, or put through a food processor. Don't overdo it, we just need shredded chicken rather than ground.
Slice the baguette into thin slices, then mince the garlic cloves.
1 French or Italian baguette,,
2 cloves garlic,
In a medium sized bowl, add in the tomatoes, cheese, mayonnaise, garlic, salt, chicken pieces, and parsley.
3-4 medium tomatoes,,
1 Tbsp mayonnaise,
1 cup mozzarella cheese,,
2 pinches salt,
1 lb chicken thighs,,
2 cloves garlic,,
1 handful parsley,
Turn oven on to medium broil.
Spread out the baguette slices onto an oven sheet.
Put the chicken and cheese mixture on each slice, about 1½ Tbsp.
Transfer to the oven to broil for 5 mins.
Enjoy this warm chicken appetizer!
Notes
You can prepare the chicken mixture in advance and refrigerate it. Add on top the baguette slices just before broiling!
