Use a sharp knife to cut potatoes in long thin strips. Place potato strips into a medium-sized bowl, add cold water just to cover the potatoes, and let them stand for 20 minutes.
2 Tbsp extra virgin olive oil
In 20 minutes drain the potatoes, place them onto a clean kitchen towel, and let them dry.
Put the potatoes back into the clean bowl. Add olive oil, Italian seasoning, garlic salt, black pepper, and paprika (if using). Mix well with a spoon trying not to break the potato strips.
2 Tbsp extra virgin olive oil, 1 tsp Italian seasoning, 2 tsp garlic salt, ½ tsp ground black pepper, 1 tsp paprika,
Line a baking sheet with parchment paper and put the seasoned potato strips on the sheet in a single layer.
Bake at 425 F for 30-40 minutes, depending on the thickness of your fries.
As soon as the potato strips start browning on the edges and become crispy on the outside, the fries are ready! They will be soft inside. Take them out of the oven, and serve hot. They lose their crispness as they cool down.
Notes
Serve Immediately: Enjoy these french fries straight from the oven, as they tend to lose crispness as they cool.
