Instructions
Preheat the oven to 350 F. Line 2 baking sheets with parchment paper.
Mix all the dry ingredients – both types of flour, baking soda, baking powder, and salt.
1 cup gluten free flour,
½ tsp baking powder,
½ tsp baking soda,
½ tsp salt,
1 cup oat flour
In a separate bowl, beat the butter with sugar. Add egg and vanilla.
1 stick unsalted butter,,
1 cup sugar,
1 egg,
1 tsp vanilla extract
Pour the dry ingredients into the wet ingredients, and mix well. Add chocolate chips. Place the dough into the fridge for about 30 minutes.
⅔ cup chocolate chips
Make balls with your hands and flatten them slightly. Place them on a baking sheet, leaving some space between cookies.
Bake for about 10-12 minutes until they get lightly golden. Let it cool and enjoy!
Notes
Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack. This helps them set.
