The Best Crunchy and Sweet No-Bake Chocolate Salami (Shokoladnaya Kolbasa)

Perfectly crunchy and sweet Sweet No-Bake Chocolate Salami or Shokoladnaya Kolbasa (kielbasa) is perfect with a cup of warm tea and a table filled with friends.

What is Sweet No-Bake Chocolate Salami?

Chocolate salami is a crunchy, chocolate dessert made with cocoa powder, eggs, nuts, and cookies. Then, it’s shaped into a salami roll and chilled in the fridge until firm.

Russian chocolate salami is simple and easy. This crunchy yet soft dessert will sweeten up your life! No baking required. I like to serve it when I have friends over. It’s always a hit!

One of the special ingredients in this dessert is animal cookies. That’s right! My kids like to snack on them when I pull them out to make this chocolate salami.

They also balance out with the nutty walnuts and cocoa and add one of the favorite sweet touches in this dessert. Also, you can use gluten-free crackers! Chocolate salami is one of my favorite Russian treats to make gluten-free.

This chocolate log is my all-time favorite dessert!

Honestly, I can eat way too much of this treat at once: it’s one of my food weaknesses. It’s great to make ahead for the holiday table or to bring over to someone’s house. When we make Christmas boxes, we include it for the neighbors!

All you need is 6 ingredients to make chocolate salami.

Animal cookies: Unlike many other recipes that I have seen floating around the web, I use animal cookies. They have a buttery, crunchy, and delicate taste.

Walnuts: Walnuts are not best for chocolate salami, no other nut will do.

Sugar: For some sweetness.

Eggs: Will cook, but still no baking required. Scroll down to see how it’s done!

Butter: Unsalted

Cocoa: or Cocoa powder for the chocolate part.

How to make Sweet No-Bake Chocolate Salami

Step 1: Crush animal cookies

Crush animal cookies by hand or in a food processor into a large bowl (medium sized pieces).

Step 2: Add walnuts

Add the chopped walnuts to the cookie bowl.

Step 3: Melt the butter

In a saucepan, melt the unsalted butter.

Step 4: Add sugar and cocoa

Sift sugar and cocoa, add to the butter.

Step 5: Boil

Bring to a boil, take off heat.

Step 6: Stir in eggs

Stir in eggs one by one, mixing quickly after each egg.

Step 7: Combine

Pour into the walnut and cookies and combine together.

Step 8: Prepare the surface

On a clean surface, take plastic wrap or parchment paper and cut off a square piece.

Step 9: Add chocolate and form the shape

Put ⅓ of the chocolate mix and with the help of plastic wrap (or parchment paper), form a sausage shape. Make a knot at each end.

Step 10: Repeat

Repeat the last step until there is no mix left.

Step 11: Refrigerate

Transfer the kielbasa into the refrigerator until it becomes stiff (a few hours, or overnight). For faster results, freeze.

Step 12: Enjoy

Once firm, slice and enjoy with tea! You can roll it in powdered sugar to make the salami effect.
