And every season, I love making these roasted carrots with sage quite a few times. They make a great side dish for a quick weeknight dinner.

How to Roast Carrots with Sage

Step 1: Prepare equipment

Preheat the oven to 425F. Line the baking sheet with parchment paper.

Step 2: Prepare the carrots 

Wash, dry, and trim off any long roots and long green tops from the carrots. Peel them and cut them into ½-inch thick sticks.

Step 3: Combine ingredients

In a large bowl, combine melted ghee butter, maple syrup, sage, salt, and pepper.

Step 4: Add carrots 

Add carrots and massage to infuse the flavors.

Step 5: Place carrots on a baking sheet 

Spread in an even layer on a baking sheet.

Spread out carrot pieces on parchment paper ready to bake.

Step 6: Bake sweet carrots 

Roast carrots for 15 – 20 minutes, or until carrots are soft, caramelized, and fork-tender. If needed, sprinkle with more salt for serving.

How to store leftover roasted carrots

Roasted carrots can be stored in an airtight container in the refrigerator for 3 to 4 days. They do not freeze well.

  • Cut thicker carrots diagonally to get the best flavor. Plus, they plate beautifully this way. You’ll get that earthy sage flavor instead of burnt, bitter herbs.
  • Substitute ghee for olive oil or melted butter.

  • Lining the baking sheet with parchment paper will prevent the carrots from sticking to the pan.
