How to make Healing Chicken and Vegetable Soup

Step 1: Prepare the chicken 

Place chicken in a large pot and cover with water by 2 inches. Cover and bring to a boil until foam forms on top of the pot. Skim the foam off and discard.

Step 2: Prepare the vegetables

On a cutting board, chop the onion and kale. Slice the carrots and celery then mince the garlic. 

Step 3: Add ingredients to the pot

Add all other ingredients except kale to the pot and bring to a rolling boil then reduce heat to a simmer. Cover the pot leaving a crack and simmer for 1 ½ -2 hours until meat begins to fall off the bone.

Step 4: Debone the chicken

Remove the chicken from the pot and allow the chicken to cool enough to handle then remove the bones, skin, and other unwanted parts.

Step 5: Add the chicken meat back into the pot 

Get as much clean shredded chicken meat as you can from the chicken pieces and place them back in the pot along with the kale.

Step 6: Finish the chicken soup and serve 

Bring soup to a simmer for a few more minutes until greens soften. Turn off the heat and serve warm. Enjoy!

  • Store leftover healing chicken soup in the fridge for up to 5 days in a sealed container. Reheat it on the stovetop or in the microwave for 2 to 3 minutes.
