A healthy recipe to serve at your next barbecue

Growing up, barbecues happened quite frequently. And of course, I never complained. I was happy with my hot dogs, burgers, and salads. I could have a barbecue every day of the summer, and never get tired.

One summer night, I had a grilled pineapple. And boy was my mind blown. I had two thoughts racing in my head, over and over again.

“How are these pineapple slices so delicious?”

“Where has this been all my life?”

And my obsession with grilled pineapple was born.

Fast forward to today, and I still enjoy the great taste of grilled pineapple. But I prefer mine with a bit more flavor now. Specifically, sweet ginger as it adds a zippy finish. It is so good!

The pineapple bursts into a sweet, juicy flavor when combined with honey and ginger. And once you grill that combination? The sweet pineapple fragrance becomes obsessive-worthy. If you’re looking for new recipes for your next barbecue, then you need to give this a try. And don’t forget to stop and relax with your loved ones on the patio.

The Grilled Pineapple recipe is filled with a host of nutrients

Sweet pineapples are loaded with natural sugars and nutrients like Vitamin C, B Vitamins, fiber, and manganese.

Ginger has medicinal power and is good for clearing up the skin, and preventing infection, has antioxidant and anti-inflammatory properties, and can also relieve oxidative stress. Eating more of it also fights Alzheimer’s disease and cancer.

Honey is good for preventing infection. It fights the germs and bacteria in the body and promotes your health.

What I love about these grilled sweet ginger pineapple slices:

  • They’re a healthy snack! Now, barbecues aren’t exactly synonymous with healthy foods, but this recipe is different!
  • It’s a super easy recipe! Have a little helper at home? This would be the perfect recipe they could help with during your busy barbecues! Just combine your marinade ingredients and let your pineapple slices sit in there for about 25 minutes.
  • It’s a refresher. Pineapples are a great treat after a meal, especially if you feel bloated.
  • They’re versatile and can be served as an appetizer, side dish, or delicious dessert!

How to make Grilled Ginger Pineapple Slices

Step 1: Prepare the pineapples

Use a sharp, large chef’s knife to cut off the pineapple’s top as well as the bottom of the pineapple. You want to cut at least 1/2 inch off from both sides. Peel, cut out the core, and slice the pineapple into rings.

Step 4: Heat grill

Spray the grill with non-stick spray or lightly brush the grates with oil. Turn on your gas grill or charcoal grill on medium heat while the pineapple rings marinate.

Step 5: Grill pineapple slices

Place slices of pineapple in a single layer and cover grill. Cook the pineapple for  5-7 minutes on each side. Once you see nice grill marks and a golden brown color, remove them from the grill.

Grilled pineapple will last up to 4 days in the refrigerator in an airtight container. In the freezer, this easy recipe will last up to 4 months. When you are ready to eat them again, thaw them in the fridge overnight and then grill through until warm. Serve and enjoy!

Expert Tips

  • While grilling, you can baste the top and sides of pineapple slices with the remaining sauce.
  • Before you start the grill, spray the top with a cooking spray like the non-stick grill spray so that pineapple slices don’t stick to the grill.
  • Place pineapple slices on a cookie sheet then grill so that it’s easy to remove from the grill.
  • Cut each pineapple slice to about a 2-inch slice.
