How to make Drunken Cherry Chocolate Cake
Step 1: Preheat the oven
Turn the oven on 350°F.
Step 2: Start with the liquid ingredients
Mix eggs and sugar in a large mixer on high speed. (If you don’t have one, a hand mixer is just fine)
Step 3: Prep the dry ingredients
While eggs and sugar mix, in a separate bowl sift baking powder, flour, and cocoa together.
Step 4: Add the chocolate flour mix
Turn speed on the mixer to the lowest and add in the flour and cocoa mix.
Step 5: Bake
Spray the cake pan with butter, and pour the cake mixture into the pan. Put in the oven for 30 mins, or when the inserted toothpick comes out clean.
Step 6: Prep the cherries
Combine cherries and concord red wine in a small bowl or shallow plate. Let it stand for the flavors to meld.
Step 7: Make the cream
With a hand mixer, start mixing sweetened condensed milk.
Step 8: Add cool whip
Add in the cool whip and beat for half a minute. Set aside.
Step 9: Cut the cake
After the cake has risen, and taken out of the oven. Let it cool down for 5-10 minutes. With a bread knife cut half an inch of the top of the cake, try to make it even.
Step 10: Take the insides out
Take the inside of the cake and put it in the cream bowl, leaving about half an inch of the sides and bottom.
Step 11: Soak the cake
From the cherry and wine, take the liquid part and spread it around the inside of the cake, (this will help this part of the cake not to get dry). *Leave some for the top!
Step 12: Add back the cake
Cover the cake pieces well in the cream and start putting them back into the cake.
Step 13: Add the cherries
Take the cherries that have been in the wine and poke them into the cake (cream) all over.
Step 14: More cream
Add in any cream you have left, and spread evenly with a knife.
Step 15: Cover the cake
Spread the rest of the cherries and liquid into the cream and put the cake top back on.
Step 16: Make the chocolate
In a bowl melt butter and add the milk with the cocoa. Combine.
Step 17: Mix with the chocolate chips
As soon as you take it out of the microwave, add chocolate chips, and combine quickly. (you could also do this on the stove in a saucepan if you prefer).
Step 18: Glaze
Pour the melted chocolate glaze on the cake.
Step 19: Ready
Let stand in the refrigerator until ready to serve!
Expert Tips
- Let those cherries soak! Give the cherries and wine some time to get properly acquainted.
- Use the liquid from the soaked cherries to add to the sides of the cake. This helps the cake layers from drying out.
- Wait until the cake has cooled before adding the glaze. Otherwise, it’ll just melt off and you won’t get that nice glossy sheen that chocolate ganache gives.
- Decorate the top of this layer cake with pitted cherries or maraschino cherries. Add chocolate shavings for a fun decor look!
