Tender Breaded Chicken in the Oven on Skewers

Tender Breaded Chicken Skewers are juicy and crisp, and out-of-this-world delicious. These Chicken Kebabs are an easy recipe to prepare ahead of time and perfect for dinner time.

This breaded chicken recipe is from my mom’s cookbook and was one of our favorite chicken dishes growing up. She would make these chicken skewers for us for busy weeknights after work. But making the chicken on a stick is always a hit at big parties as finger foods!

Recipe ingredients olive oil, pepper, garlic, eggs, salt, bread crumbs, chicken thighs, and several wooden skewers.

Chicken thighs make a very tender and juicy chicken meat to work with, especially when baking. They don’t dry out like chicken breasts do.

Salt, black pepper, and chicken seasoning add flavors to this recipe!

Eggs help for the marinade and breadcrumb coating to stick to the meat.

Garlic adds a rich flavor that goes great with chicken.

Olive oil is for sauteing the chicken before you bake. This helps the outside breading to get a nice golden brown color.

Bread crumbs create the breading of these chicken skewers. You can use gluten free or panko breadcrumbs if you’d like.

Prep the Skewers for the Oven

  • Start by soaking the skewers in water.
  • Add minced garlic and water into an oven sheet, then place a rack on top.
  • Then in a small bowl, combine salt and black pepper and a pinch of chicken seasoning. Add chicken pieces into the bowl and let the chicken marinade.
  • In a shallow bowl or plate, whisk eggs, and in a separate dish, add in breadcrumbs.
  • Heat olive oil on medium-high heat in a pan.
  • Put chicken pieces on skewers.
  • Dredge in whisked eggs and then in breadcrumbs.
  • Add chicken to the pan to get a golden brown color.
  • Take it out and place it on the wire rack of the oven sheet.

How to make Tender Breaded Chicken Skewers

Steps 1 & 2: Preparations

Preheat the oven to 350F.

Take a plate or a cup and soak your skewers in water.

Step 3: Make the garlic mixture

Mince garlic and combine with water. Pour into an oven safe dish.

Steps 4 & 5: Season the chicken

In a small bowl combine salt and pepper. You could also add a pinch of your favorite chicken seasoning.

Cut chicken thighs into cube size pieces. Mix them into the salt and pepper until you have seasoned all the meat.

Steps 6 & 7: Prepare the egg and breadcrumb mixtures

In one plate whisk the eggs.

In another plate put in the breadcrumbs.

Steps 8 & 9: Prepare the chicken and skillet

Heat olive oil in a pan.

Thread the meat onto the skewers.

Steps 10 & 11: Dredge the chicken skewers

Dredge in whisked eggs.

After eggs, dredge the chicken in the breadcrumbs.

Step 12: Sear the chicken skewers

Add the chicken skewers into the heated pan with olive oil. This part is just for the color of the chicken shish kebabs. Do not cook them through.

Step 13: Prepare to bake

Once the chicken is golden-brown, put it in the oven dish with garlic and water.

Step 14: Bake the chicken

Cover with foil and bake for 30 minutes.

Expert Tips

  • Cut the chicken thighs into thin pieces instead of cubes. They should not be very large.
  • If you don’t have seasoning on hand, you can skip that step in the marinade ingredients. Instead, add a pinch more salt and black pepper.
  • Soaking the wooden skewers in water is a must unless using metal skewers.
  • Chicken breasts can be a substitute for chicken thighs in this recipe.
  • Cover the whole oven baking sheet with aluminum foil once you’re ready to bake.
