Simple Beet Salad with Walnuts and Fresh Parsley

red beets,
boiled, peeled, & grated

raw walnuts,
chopped

cloves
garlic,
minced

mayonnaise,
from olive oil

parsley,
chopped, optional
Instructions
Boil red beets until soft, then let cool.
2 medium red beets,
Peel and grate the boiled beets.
Mix the beets, walnuts, and garlic.
¼ cup raw walnuts,,
2 cloves garlic,
When ready to serve, mix with mayonnaise and garnish with parsley. You may add salt to taste (optional).

To make this salad ahead of time, prep the ingredients beforehand and mix all together only when you're ready to serve.
