Summer Fruit Salad with Citrus Mint Dressing

Ingredients

  • 1 mango, sliced
  • 1 cup strawberries
  • cups peaches, sliced, about 2 peaches
  • ½ cup blueberries
  • ½ cup cherries, pitted

Citrus Mint Dressing:

  • ½ orange, juiced
  • 1 Tbsp lime juice
  • tsp honey, or more, to taste
  • 1 Tbsp mint leaves, minced

Instructions

  • In a cup or small bowl whisk all ingredients for the dressing (orange, lime juice, honey, and mint leaves.)

  • Add fruit to a large bowl and pour the dressing. Chill until ready to serve.

Notes

You can store this fruit salad in an airtight container in the refrigerator for up to 3-4 days. Avoid leaving it at room temperature for too long. Also, you can wait to add the dressing when you’re ready to serve. This prevents the fruits from getting soggy.
