Beef is rich in protein and benefits for our body. It’s a great meat to have when we need an extra boost.

Potatoes are starchy and fill us up, perfectly complementing the rest of the ingredients.

Rice may not be common in soups, but in this soup it provides a great source of carbohydrates.

Onion adds flavor to the beef while sautéing and is loaded with vitamins that support our immune systems.

Tomato paste adds a rich flavor to the beef as it’s cooking. It adds a unique depth to dishes.

Garlic has amazing anti-inflammatory benefits.

Along with those ingredients, you’ll need olive oil, salt, pepper, and parsley (for garnish).

Some, if not most of these ingredients, are simple ingredients that you might already have on hand.

How to Make a Simple Kharcho Soup

Step 1: Prepare the pot

Fill up a medium size pot with water.

Step 2: Add beef and cook

Place cubed beef in the pot and a tablespoon of salt. Cook for 1 hour over medium-low heat.

Step 3: Cook potatoes and rice

Take meat out. Add potatoes and rice to the pot and cook until the potatoes are soft.

Step 4: Sauté onion

In a skillet, heat up 2 Tablespoons of olive oil and add in the onion. Sauté until onion is almost transparent.

Step 5: Add meat and sauté

Add cooked meat to the onions. Continue sautéing for another minute.

Step 6: Add garlic and tomato paste

Add in garlic and stir in a tablespoon of tomato paste. Sauté everything together for two minutes. Add to the pot.

Step 7: Boil and season

Bring everything to a boil, then add pepper to taste.

Step 8: Garnish

Sprinkle with parsley and serve!

  • 6 cups water
  • 1 lb filet mignon beef, 1" cubed
  • 1 Tbsp salt, + more to taste
  • ½ cup rice
  • 3-4 potatoes, cubed
  • 2 Tbsp olive oil
  • 1 Tbsp tomato paste
  • 1 clove garlic, minced
  • 1 onion, chopped
  • 1 handful parsley, chopped
  • ground black pepper, to taste

Instructions
