How to Make Oven Baked Salmon with Tomatoes Recipe

Step 1: Prep salmon and oven

If you use frozen fish, thaw it, rinse, and pat dry with paper towels. Preheat the oven to 400°F. On an oven-safe baking sheet, place aluminum foil (or parchment paper). 

Step 2: Season the salmon

Place salmon on the foil or paper and season salmon with a sprinkle of salt and pepper, salmon seasoning, and squeeze out half a lemon (without seeds.)

Brush salmon with mayonnaise.

Step 4: Top it off with tomatoes and cheese

Spread sliced tomatoes on salmon and sprinkle with grated mozzarella cheese.

Step 5: Cover in foil and bake

Close the salmon with the aluminum foil and place in the oven for 20-25 minutes, if you like, you could open the foil for the last 3-5 minutes so the cheese gets golden.

Expert Tips 

  • Choose the best quality salmon and avoid salmon with any browned spots on the belly or around the edges of the fillet.
  • The aluminum foil or parchment paper should be a bit larger than your salmon size so you can close it to cook.
  • There is no need to flip the fish as that can result in your fish sticking to the pan and potentially burning.
  • Place salmon on paper skin side down to protect the flesh.
  • You can season salmon with garlic powder, smoked paprika, chipotle powder, cumin, red pepper flakes, fresh basil, lemon pepper, fresh oregano, rosemary, or thyme.
  • Salmon can be replaced by any fish steak or fillet, or by boneless, skinless chicken breast. 
  • Use mozzarella cheese, parmesan, gouda, goat cheese, or brie. Choose any that your family likes. 
  • You can add lemon slices, fresh parsley, or bell peppers to garnish the dish. 

How to store Leftover Tasty and Easy Oven Baked Salmon with Tomatoes

  • Place leftover salmon in a shallow airtight container or wrap it tightly with heavy-duty aluminum foil or plastic wrap. Store for 3-4 days in the fridge.
  • Cooked salmon without the tomato and cheese toppings will last approximately four to six months in the freezer as long as you seal it tightly in freezer-safe bags. Because of the toppings which will influence the flavor and texture of the salmon, freezing this specific recipe is not recommended.
