For any weeknight dinner, this chicken and vegetable recipe is perfect! Baking is my favorite way to make this recipe. With minimal cleanup, you just need a baking dish and you’re good to go.

How to make a Healthy and Simple Vegetables with Chicken Recipe

Step 1: Get the oven ready

Preheat your oven to 350F.

Step 2: Prep the chicken and vegetables

Cut your chicken and vegetables in small pieces and place them into a bowl.

Step 3: Add spices and olive oil

Add oil and spices. Mix well to coat every piece.

Steps 4 & 5: Place everything in the bag & a baking tray

Take a large Oven Bag and put all the ingredients inside. Close the bag with a tie and turn it over a few times (for an extra mix.) Then place on a baking tray.

Step 6: The important step!

Cut 6 small slits on the top of the bag to allow air to escape. This step is very important, if you don’t want your bag to burst! Bake in the middle rack for 1.5 hours.

Step 8: Opening the bag

Take the tray out of the oven. Wait for 10-15 minutes before opening the bag. Be careful, it will be hot.

Step 9: Serve

Put the chicken and vegetables in a serving dish and enjoy!

  • Use any part of the chicken you like. I prefer to buy a whole chicken and use the breast & chicken thighs in this recipe.
  • Be sure to cut the slits into the top of the bag. It is very important for the bag not to burst while baking.
  • Season the roasted chicken and vegetables generously to infuse the flavor into your meal.
  • Infuse lemon juice, garlic butter, fresh herbs, or sprinkle some parmesan cheese on top for extra flavors.
