Easy Homemade Creamy Alfredo with Mushrooms

This Mushroom Alfredo Pasta dish has got “comfort food” written all over it. It’s saucy, cozy, and totally worth the carbs. An easy homemade creamy Alfredo with mushrooms is great dish to reheat.

Mushroom alfredo with pasta and extra parmesan, serving on a plate with chopped parsley on top and a fork on the side.

I’ve had the most relaxing weekend and to be completely honest, I was a little disappointed when it came to an end. I wanted to keep that cozy feeling going at the start of the week. So I had an “Aha!” moment. Make a cozy meal.

I have a few favorite cozy dishes actually. Like this incredible beef chili, or my favorite one-pot beef stew. But on this particular day, I was craving something with a bit more carbs. It had to be mushroom alfredo.

I was excited to make it for two reasons. One, because I couldn’t wait to chow down on it! Two, because it’s so easy to make. I’m not sure exactly what it is about this recipe, but it’s one of those that reminds you that cooking is actually fun!

Perhaps it’s making the roux; whisking your butter with your flour, and slowly incorporating your cream. Maybe it’s combining the creamy alfredo sauce and the mushrooms and the pasta altogether at the end. Or, it’s all of those things. This recipe is just as fun to make as it is to eat.

This is a definite hit in our home. Everyone almost always goes for seconds. Some of my kids aren’t too crazy about mushrooms, but they don’t mind them in this dish.

So if you’re looking for a comfort meal to get cozy with, you have to make this mushroom alfredo. A weeknight dinner of comfort food like this is absolutely worth it.

Expert Tips

  • Garnish this pasta dish with fresh parsley before serving for an appealing presentation.
  • Adjust the ratio of cream cheese to heavy whipping cream based on your preference. Adjust for a balance between richness and creaminess.
  • Use garlic powder rather than fresh garlic for a subtler, evenly distributed garlic flavor throughout the homemade alfredo sauce.
  • Cook pasta just until al dente as it will continue cooking briefly when combined with the hot alfredo sauce.
  • Don’t forget to add some pasta water to the sauce! This will bond the sauce and the pasta together well.
  • Substitute the heavy whipping cream for milk if you’d like a lighter alfredo sauce.
  • If your pasta cooks before you’re done making the sauce and sautéing the mushrooms, toss it in a little bit of olive oil.

Absolutely delicious. I omitted the salt because I find parmesan cheese salty enough. I used this sauce on chicken and roasted garlic ravioli . YUMMMM I would use it on any pasta and possibly grilled chicken breast.
