Step 1: Prepare the chicken
Boil the chicken with a pinch of salt for 20 minutes.
Step 2: Chop tomatoes and herbs
Chop tomatoes and a handful of fresh parsley.

Shred mozzarella cheese, if you haven’t yet.
Chop the boiled chicken into small pieces, or put through a food processor. Don’t overdo it, we just need shredded chicken rather than ground.
Step 5: Slice the baguette
Slice the baguette into thin slices, then mince the garlic cloves.
Step 6: Combine topping
In a medium-sized bowl, add the tomatoes, cheese, mayonnaise, garlic, salt, chicken pieces, and parsley.
Step 7: Preheat oven
Turn the oven on to medium broil.
Steps 8 & 9: Prepare to bake
Spread out the baguette slices onto an oven sheet.
Put the chicken-cheese mixture on each slice, about 1½ Tbsp.
Step 10: Broil
Transfer to the oven to broil for 5 mins.
