Easy Cheesy Bruschetta Chicken Bake with Tomatoes

This bruschetta chicken recipe is the only bruschetta recipe you need. It features a crispy baguette, moist chicken, juicy red tomatoes, and shredded cheese that pulls everything together. It is delicious.

How to Make an Easy Cheesy Bruschetta Chicken Bake with Tomatoes

Step 1: Prepare the chicken

Boil the chicken with a pinch of salt for 20 minutes.

Step 2: Chop tomatoes and herbs

Chop tomatoes and a handful of fresh parsley.

Steps 3 & 4: Shred cheese and chicken

Shred mozzarella cheese, if you haven’t yet.

Chop the boiled chicken into small pieces, or put through a food processor. Don’t overdo it, we just need shredded chicken rather than ground.

Step 5: Slice the baguette

Slice the baguette into thin slices, then mince the garlic cloves.

Step 6: Combine topping

In a medium-sized bowl, add the tomatoes, cheese, mayonnaise, garlic, salt, chicken pieces, and parsley.

Step 7: Preheat oven

Turn the oven on to medium broil.

Steps 8 & 9: Prepare to bake

Spread out the baguette slices onto an oven sheet.

Put the chicken-cheese mixture on each slice, about 1½ Tbsp.

Step 10: Broil

Transfer to the oven to broil for 5 mins.
