Fast forward many years, and I find myself choosing this 3-ingredient recipe of squash fries more often. I know they might be higher in carbs and even in calories, but they taste amazing to me. Plus, I’ll take the added nutritional perks like higher Vitamin A content and high fiber.

How to make Butternut Squash Fries

Steps 1 & 2: Prepare and peel

Preheat the oven to 425 F.

Steps 3 & 4: Deseed and slice

Slice squash in half and take out the seeds.

Slice into thin fries.

Mix squash slices with extra virgin olive oil and sea salt. Spread on a baking sheet and bake for 15 minutes, then flip over slices and continue baking for another 15 minutes. Broil for the last 3 minutes. Enjoy right away!
