Mornings can be so hectic and hard, so I’ve developed the perfect make-ahead breakfast idea that can double as a dessert! This creamy strawberry chia seed pudding is going to become a fast favorite in your home!
I love chia seeds so I’ve made some recipes before like tropical green chia fruit cups, in addition to a dairy-free berry chia pudding recipe, but there’s nothing like this creamy strawberry version!
In this recipe we blend the honey, milk (of your choice), and strawberries together to create a sweet creamy base, and then add the chia seeds to soak up that thick elixir overnight. It tastes like heaven, and all of the ingredients are wholesome – especially those magical chia seeds!

Ingredients To Make Creamy Chia Seed Pudding
This recipe is so simple and so are the ingredients! You’ll only need a handful of items from the grocery store to make a big batch of this chia pudding.
- Coconut milk – or the milk of your choice!
- Strawberries – fresh preferred, but you can also use frozen. You can also make different falvors of this pudding if you’d like to use blueberries, blackberries, etc.
- Chia seeds
- Honey
- Vanilla extract
- Salt
- Berries – for topping

How To Make Strawberry Chia Pudding
Step 1: Blend Milk and Strawberries
Add the milk, strawberries, honey, vanilla, and salt to a blender and blend everything together until it’s smooth.
Step 2: Portion Into Jars
Pour the liquid into two (or more, if you’ve doubled the recipe) pint-sized glass jars.
Step 3: Add Chia Seeds
Add chia seeds to each glass jar and whisk thoroughly until they’re well combined with the strawberry mixture.
Step 4: Let Sit
Allow the chia seed pudding to sit in the refrigerator for at least 2-3 hours, or overnight.
Step 5: Serve
Serve the strawberry chia pudding as is, or topped with extra sliced strawberries, other berries, granola, etc.
Tips For The Perfect Strawberry Chia Pudding
Measure Out Your Milk First
The ratio of milk mixture to chia seeds is important in reaching the best consistency. Make sure to measure out your milk – I like coconut and oat milk – and then blend it with your strawberries.
Add Your Choice Of Sweetener To Milk/Strawberry Mixture
I like mixing honey into the milk and strawberries before adding anything else because it it ensures the base of the pudding is evenly sweetened.
The Perfect Ratio
A lot of people complain of chia pudding that’s too runny or too thick. I find the perfect ratio is ⅓ cup of chia seeds to 1 cup of liquid. But if you want something a tad lighter, feel free to use ¼ cups of chia seeds per 1 cup of liquid. It’s up to you, but I like a creamy consistency.
Set For At Least 3 Hours
Or make it the night before to enjoy in the morning! It takes some time for the chia seeds to absorb the liquid and reach the gel-like texture we all love! Allow it to sit and do its thing, although I know it will be hard to wait!

This chia seed pudding is full of wholesome ingredients, so I do think it’s a healthy breakfast option, snack, or dessert. I’m of the mindset that everything is good in moderation.
It has lots of fiber so it helps with digestion and it also has vitamins and minerals that reduce inflammation.
You can keep your chia seed pudding in an airtight container for up to 5 days in the refrigerator.
If you open your bag of chia seeds and see sliminess, mold, clumps, or anything that looks like it doesn’t belong there – they’re bad. Also, check with your nose! Chia seeds have a pleasantly neutral nutty smell, so if they smell strongly or of something nasty, don’t eat them.
