Creamy Grilled Peaches and Burrata Salad

Sweet summer peaches and burrata cheese combine in this Creamy Grilled Peaches and Burrata Salad to make the perfect side dish! You can never go wrong with stone fruits and burrata. Fruit and cheese in a salad is the perfect combination. A large platter of juicy peaches with nice grill marks and fresh cheese is a match made in heaven with every perfect bite.

What is burrata cheese?

The first thing you may want to know is what is burrata cheese. Creamy burrata cheese is a semi-soft white Italian cheese made from fresh mozzarella and cream. It’s similar to mozzarella but with a fresh, buttery flavor and consistency. 

It’s made from either cow or buffalo milk and splits perfectly when you cut it to reveal the perfectly soft center. Like mozzarella cheese, it is great for a caprese salad or any other main dish salad. 

It works well on toast, so naturally, I couldn’t resist adding grilled bread to serve with this salad. The creamy ball of deliciousness called burrata is definitely a favorite cheese of mine and will quickly become yours too. You can find it at specialty Italian markets or in grocery stores that have a wide variety of cheeses available.

Stone fruits like peaches, apricots, and nectarines are surrounded by a thick outer shell and have a large pit in the center. They are in season for a short time so you need to get them while still fresh. 

A perfectly ripe peach has deep summer sweetness in every perfect bite. You know that my kitchen is overflowing with juicy peaches and this Grilled Peach Salad Recipe is yet another way to use this stone fruit to make a good recipe.

Fresh peaches: You’ll need firm peaches that are ripe for this recipe. They are the star ingredient so choose the best. 

Burrata: This mild cheese makes this grilled peach salad creamy and flavorful with its smooth touch. You’ll need 8 ounces of this tasty cheese.

Fresh basil: Adds the earthy flavor that perfectly matches the creaminess and sweetness of peaches and burrata.

Sourdough bread: Will be grilled to serve alongside the salad.

  • Extra virgin olive oil: Adds texture and richness to the dressing. You can use avocado oil or grapeseed oil as well because they have a higher smoke point.

How to Make Grilled Peach Burrata Salad Recipe

Step 1: Prepare the dressing

In a small bowl, whisk extra virgin olive oil, wine vinegar, garlic clove, Dijon mustard, a handful of fresh basil leaves, sea salt, and ground black pepper, to taste. Set aside at room temperature and allow the flavors to mix until needed.

Step 2: Prepare the juicy peaches

Wash the peaches, remove the pit, and cut into bite-sized pieces of about  ⅓ inch slices.

Step 3: Grill peach slices 

Lightly grease a grill pan with olive oil, make sure the pan is hot before adding peaches. Grill peach slices for about 30 seconds on each slide until you have grill marks established and caramelized.

Step 4: Add peaches and cheese to the plate

Arrange peaches and burrata cheese on a serving plate or large platter.

Step 5: Grill bread

Brush bread slices with olive oil and grill for 1 minute on each side.

Step 6: Add basil leaves

Garnish with fresh basil leaves and drizzle with the dressing.

Step 7: Assemble and serve

Serve on individual plates with grilled sourdough bread.

Expert Tips:

  • Depending on the size of your peach slices, take care so that they don’t fall through the grill grates.
  • If you’re not a fan of basil leaves, use arugula, spinach,  thyme, lemon thyme, mint, or another salad green. 
  • To prevent the peaches from sticking to the grill grates, lightly coat them with olive oil. 
  • Add an extra drizzle of olive oil if you prefer to finish off the salad before serving.  
  • Cut the peaches into slightly thick wedges, if they are too thin they will turn mushy.
  • You can use a grill pan if you don’t have an outdoor grill.
  • Try nectarines if you’re not able to find good peaches. 
  • If you’re not able to find burrata, replace it with high-quality ricotta cheese or fresh mozzarella. 

How to Store Leftovers

  • This salad is best enjoyed fresh. Store leftovers in the fridge in an airtight container for 1-2 days. The peaches will lose their texture and the burrata is a fresh cheese, which can start to go bad pretty quickly. 
  • Freezing is not recommended because of the fresh ingredients in the recipe.

Which peaches are best for this recipe?

Freestone peaches are often larger and have a firmer texture. They’re less juicy than clingstone peaches, but they’re still juicy and delicious. Freestone peaches have the perfect balance of sweetness.
They are usually found in the grocery stores and are best eaten fresh. They have a flesh that is easily removed from the pit making them easy to use

Can I use canned peaches?

Fresh is best but you can use canned peaches if you prefer. Drain the peaches well and pat them as dry as possible. Grill them and follow the same recipe as fresh peaches.

What can l serve with this recipe?

Do l have to grill the peaches for this recipe? 

You can just use fresh peaches if you prefer but grilled peaches have a little smokiness which gives it a nice flavor profile.
