Key Ingredients

Puff pastry: This pre-made pastry dough is made with layers of butter and flour, providing a light and flaky texture.

Brie cheese: This soft and creamy cheese has a mild, buttery flavor. Its flavors are tasty when combined with thyme and honey.

Fresh thyme: A fragrant herb with a slightly sweet and earthy flavor.

Fresh peaches: This juicy and sweet fruit is in season during the summer months. It’s best to get the freshest peaches you can find!

Egg: Egg is used to brush the pastry dough to give it a shiny, golden-brown finish.

Honey: I love this natural sweetener that adds a touch of sweetness to the tarts!

Expert Tips:

  • To save time, you can use pre-sliced peaches from a can or jar.
  • To prevent the tarts from getting soggy, be sure to slice the peaches thinly and pat them dry with a paper towel before placing them on the pastry dough.
  • Don’t throw away your puff pastry scraps! Use them to make some extra bite-sized tarts with any leftover peach and brie mixture. Simply cut the scraps into squares or circles and top them with chopped peaches and a slice of brie, then bake until golden brown.

My mom used to make something very similar to this using raspberries and blackberries. We never thought to try it with peaches! So good! Great for a weekend breakfast.
