Late fall and winter is the time for all kinds of colorful fruit. Citrus choices are everywhere, from grapefruit in many hues to brilliant blood oranges

This is also the season for both persimmons and pomegranates, which makes them an excellent addition to any festive autumn meal, Christmas dinner, dinner party, or Thanksgiving meal. This great salad celebrates the best of both these delicious fruits. 

This honeyed fruit salad makes the perfect dessert with delicious Ginger Tea after a filling fall family dinner. The sweet Fuyu persimmon salad is easy to make with the step-by-step instructions provided. It can be a new way to enjoy different textures and flavors this holiday season.

What are Persimmons and are they good?

Persimmons are a yellowish orange, underrated, sweet, and delicious fruit. They come from from edible fruit trees that are native to China and Japan so you’ll find them in Chinese recipes, Japanese recipes, Korean recipes, and Thai recipes. Persimmons seem to go by many names as they are also known as kaki and Sharon fruit.  

Persimmon is not enjoyed as often as most other fruits, but when they fill the grocery store or local farmer’s market in the late fall and winter months, you know I’ll buy them up and make a fruit salad out of them! 

They’re one of my favorite fruits to enjoy this time of year. Ripe persimmons have a unique taste making them the perfect simple fruit to enjoy with tea.

They taste best when allowed to fully ripenWhile some find persimmons flavorful and refreshing others find them one-dimensional making this Pomegranate and persimmon fruit salad the ideal solution.  

The persimmon taste is almost like honey, making them a great ingredient for fruit salads. If this is your first time enjoying this fruit, remove the stem and then cut it into cubes. The skin is fine to eat.

This dessert is perfect for gluten-free, dairy-free, and weight-watching individuals. When researching about honey, I found out that honey promotes sleep! Also, it aids your cough and is considered an antibiotic powerhouse. Ginger is one of my favorites when it comes to getting sick. It has strong anti-inflammatory, antibacterial effects that gives it powerful medical properties.

Even more bonus points to ginger for reducing muscle pain and soreness! Studies done prove that people who consumed 2 grams of ginger everyday for 11 days, had reduced muscle pain from performing elbow exercises.

Mandarin: They’re smaller, sweeter, and stronger than oranges. They add great flavor and balance out the other flavors in the salad. 

Persimmon:  Look for crisp Fuyu persimmons that have a firm texture and smooth and glossy surface. 

Banana: Add a natural sweetness and a creamy texture to the salad.

Whole pomegranates: Choose ripe pomegranates, which are the ones whose peels are beginning to crack open. They add a vibrant pop of color and crunchy texture to the salad.

Honey: Sweetens the salad.

Ginger: The ginger in this perfectly works with the persimmon giving a refreshing taste.

Along with these ingredients, you will need water and fresh mint leaves.

How to Make Sweet Persimmon Pomegranate Fruit Salad

​Step 1: Combine ginger, water and honey

In a small bowl, mince or finely chop fresh ginger, then add to honey and water, whisking it up well.

Step 2: Combine the fruits 

To a large bowl add mandarin slices, chopped persimmon, banana slices, and pomegranate seeds.

Step 3: Mix all ingredients

Mix sweet ginger water with the fruit mixture.

Step 4: Garnish and serve

Garnish with fresh chopped mint leaves. Enjoy this great salad!

How to store leftover persimmon pomegranate salad

  • This salad is best enjoyed when eaten the same day it is made, but leftovers keep in the fridge for a few days.
  • To freeze, pat dry the salad to remove moisture and place fruit pieces in a single layer on a baking tray lined with a baking sheet. Then cover the baking tray with foil or cling film. Freeze for up to 4 hours. Remove from the tray and place in a plastic freezer bag. Squeeze as much air as you can from the bag before sealing it. Freeze for 2-3 months. 

Expert Tips 

  • Enjoy the winter fruit salad straight away, or leave overnight or for a couple of hours in the fridge for the juice to infuse and marinate.
  • If you don’t have access to persimmons, plums, dates, pears or a granny smith apple would also pair beautifully with the flavors in this salad!
  • Cut your pomegranate on a plastic cutting board so the juice doesn’t stain a wooden one.  
  • You can replace honey with maple syrup and substitute mandarin with oranges.
  • Cut the fruits into bite-size pieces so that they’re easy to enjoy. 
  • The persimmons can be placed in a paper bag on the kitchen counter to ripen more quickly. They are ready to eat when they begin to go soft and the inside starts to go gooey.

What are the types of persimmons available?

There are 2 main types of persimmons: Fuyu persimmons and Hachiya persimmons. 
Fuyu persimmons have a slightly squat shape with flat bottoms with a true light orange shade. They have a bitter taste until fully ripened, but require less time to do so and can be eaten when soft to the touch.  The taste is mild with a honey-like flavor. Because they have a firm texture, they can be more easily added to salads. 
Hachiya persimmons are oval-shaped and colored in a bright blood-orange shade These are best when left to ripen until incredibly soft, with the interior turning almost pudding-like. Hachiya persimmons take longer than Fuyu persimmons to get to optimal flavor. These are often best for baking.
