Key Ingredients
A gluten-free flour blend to start. (I used this blend by Bob’s Red Mill.)
Oat flour as well. It’s important to make sure it is labeled gluten-free.
Unsalted butter to soften things up.
Cane sugar (or your regular white sugar) because these cookies wouldn’t be sweet without it!
An egg for texture.
Baking powder, baking soda, vanilla extract, and salt.

Expert Tips:
- Allow eggs and butter to come to room temperature before incorporating them into the dough for a smoother blend.
- Flatten the cookie dough balls slightly before baking to ensure even cooking and a nice cookie shape.
- Gluten-free cookies can go from undercooked to overcooked quickly. Keep a close eye on them in the oven
- Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack. This helps them set.
- Just because it doesn’t have gluten doesn’t mean that gluten-free cookie dough is safe to eat raw.
